Candy Storage

Candy lasts much longer than most people realize!

Hard candy usually has a shelf life of 1-3 years under ideal conditions.

Chocolates usually have a shorter life span: solid chocolates 12 - 18 months and filled or truffles about 4-6 months.

Ideal conditions mean, low humidity and not subjected to direct heat.

Chocolate also will absorb odors very easily! You must keep chocolates away from any sources of odors.

Most chocolates do not need refrigeration. the white surface that appears on chocolates is called, "blooming." blooming is usually the cocoa butter that has come to the surface of the chocolate. This usually occurs when the chocolate has gone through temperature changes and doesn't necessarily mean the chocolate is bad. If it's a baking bar, taste the chocolate and just melt it to mix the cocoa butter back into the chocolate.
